And that’s when these Strawberry Lemonade Cake Mix Cookies are the answer to your prayers! Insanely easy to make and loaded with summertime flavor!
A few months back, my mom texted me and asked if I had any good cake mix cookie recipes. To be honest, it had been long enough that I didn’t actually have one on-hand and ended up pulling a few good ones from this huge recipe box we call the Internet!
Then I got to thinking. Why haven’t I made any cake mix cookie recipes for the blog?! They seriously are one of the easiest cookies to make, and there are so many potential flavor combinations. And you know how I love adaptable recipes!
I suppose the Quick & Easy Chocolate Peanut Butter Cookie recipe I shared in my early days of blogging does count as a cake mix cookie recipe, but even that delicious cookie is a bit more involved than a traditional cake mix cookie since it uses cream cheese.
A traditional cake mix cookie recipe needs just three ingredients – cake mix, oil, and eggs. That’s it! Now, for these Strawberry Lemonade Cake Mix Cookies, I did add some additional flavor and mix-ins, but I think that can be forgiven. The adds are good ones, and the simplicity of the recipe is still there.
Besides the fact that these Strawberry Lemonade Cake Mix Cookies come together in a snap, I love how flavorful they are! For this recipe, we’re using a strawberry cake mix, so the strawberry flavor is front and center.
I wanted the cookies to scream summertime, though, so I added some lemonade flavor to the mix. Nothing fancy, either. One of those individual, 25¢ Kool-Aid packets is all you need. That with the strawberry cake mix is exactly the flavor combo I was looking for!
And for good measure, I threw in a cup of white baking chips. Couldn’t help myself! Mix-ins almost always add a little flair, and I like the addition in these cookies. You most certainly could leave them out, though, if you don’t want the bling.
Delicious, flavorful cookies with none of the effort. What more could you ask for? These Strawberry Lemonade Cake Mix Cookies are great in a pinch or for a lazy weekend day when a cookie craving strikes. Super simple, but oh, so good!
- 1 box strawberry cake mix
- 1 packet powdered lemonade drink mix 6.5 grams
- 2 eggs
- ½ cup vegetable oil
- 1 cup white or vanilla baking chips
Preheat oven to 350 degrees F. Line baking sheet with parchment paper or silicone baking mat.
In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, whisk together the cake mix and the powdered lemonade.
Add the eggs and vegetable oil. Beat on low speed for 10 seconds and increase to medium just until dough comes together and is well combined.
Stir in the baking chips.
Make dough balls of about 2 tablespoons (I used a #30 disher) and place on prepared baking sheet about 2 inches apart.
Bake for 9-10 minutes. Remove from oven and allow cookies to rest on baking sheet for 2 minutes before removing to a cooling rack to cool completely.
Store in an airtight container for up to 5 days.
