You guys. These Mint Chocolate Chip Cookie Trifles may be my favorite Worth Whisking blog dessert of 2017 so far! Not lying. Obvs, they look amazingly delicious, but I had no idea just how wonderful they would be until I took my first glorious bite. Heavenly, I say!
As you may have guessed, I decided to continue with the monthly theme gig into March. We’re this far into the year, why not make it a thing, right? So, January had a breakfast theme, and February had a chocolate/cherry theme. We started March with my grandma’s Grasshopper Torte, so can you guess March’s theme?

In the Frozen Grasshopper Cocktail post, I talked about my love for chocolate and mint. I’ve said it before, and I’ll say it again – you just can’t go wrong with the chocolate and mint combo. I defy you to say otherwise!
When I was trying to decide what I wanted to do to round out March’s chocolate and mint theme, my mind kept going back to trifles. Trifles are super easy and almost always amazing with their complementary mix of flavors. And while large trifles are always good, I love these personal-sized Mint Chocolate Chip Cookie Trifles.
Mine! All mine!
The shining star in this dessert is the mint chocolate chip layer – as it should be. I was so in love with the cream cheese layer I used in the Pistachio Dream Dessert and the Mexican Dessert Trifles that I knew I had to use it in these Mint Chocolate Chip Cookie Trifles! Add some crème de menthe and some mini chocolate chips, and it’s instantly transformed! So. Good.
Plus, mini chocolate chips. Hel-lo! Is anything not made instantly better with mini chocolate chips? They’re so cute!
For a little extra chocolate/mint flair, I used crushed Mint Oreo cookies for the two layers enveloping the mint chocolate chip goodness. Total no-brainer!
These Mint Chocolate Chip Cookie Trifles are almost deceiving in their simplicity. So easy, but hands-down one of the tastiest desserts I’ve had in a while. Could. Not. Stop. Eating.
Need a quick dessert for a dinner party? Or maybe you’re hosting Easter dinner next month. Whatever the occasion, these Mint Chocolate Chip Cookies Trifles are a must make!
- 1 package cream cheese 8-ounce, softened
- 1 cup granulated sugar
- 2 tubs Cool Whip 8-ounce, thawed, divided
- ¼ cup green crème de menthe
- ½ cup mini chocolate chips
- 24 Mint Oreo sandwich cookies finely crushed (plus additional for garnish)
In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and sugar until smooth and creamy. About 2 minutes.
Fold 1 container of Cool Whip into the cream cheese mixture with a spatula until completely combined.
Add the crème de menthe and stir until no white streaks remain. Fold in the chocolate chips.
Take one half of the crushed cookies and divide evenly among six small trifle dishes. (This will be about 2 tablespoons of crushed cookies in each dish.)
Divide the crème de menthe filling mixture evenly among the six dishes to top the first cookie layer.
Divide the remaining crushed cookies among the trifle dishes to top the crème de menthe filling layer.
Divide the second container of Cool Whip evenly among the trifles dishes.
Garnish with additional cookie crumbs or full cookies.
Serve immediately, or loosely cover and refrigerate up to one day.
