Healthy Honey Peanut Butter Banana Oatmeal Bites – A hearty, delicious on-the-go snack or breakfast treat that just happens to be good for you!
If you haven’t guessed by now, June at Worth Whisking is all about grab-and-go snacks. And I may have saved the best for last with these Healthy Honey Peanut Butter Banana Oatmeal Bites!
I fully admit, it’s not all that often that I can attribute the word “healthy” to many of the recipes I share on this blog. But when I can, I’m going to put it front and center! Actually, all of June’s recipes – including Berry Healthy Trail Mix and Copycat Mint Chip Brownie Larabars – have been relatively healthy now that I think of it. What’s gotten into me?!
It helps when healthy also happens to be tasty, as is the case with these Healthy Honey Peanut Butter Banana Oatmeal Bites (which from now on I will shorten to just Oatmeal Bites!). Not only are these Oatmeal Bites super yummy, they are also very filling, which means you won’t be tempted to snack on something not-so-healthy.
When I developed this recipe, I totally had breakfast on my mind. It’s my favorite meal of the day, but I know sometimes it’s easier to grab a quick breakfast than sit and eat a bowl of cereal or even wait for a couple of pieces of toast to pop up from the toaster!
These Oatmeal Bites are made with only a handful of everyday ingredients (but not oil, eggs, or flour!) and are super easy to make. You don’t even need a mixer! Plus, it is a recipe that can be made gluten-free very easily by using gluten-free oats. Love that!
This Oatmeal Bites recipe works without oil or eggs for a few reasons:
- In addition to providing flavor and a touch of sweetness, bananas often can be substituted for oil in baked goods.
- Flaxseeds mixed with wet ingredients create an egg substitute. This is an extremely common method in vegan baking. (We saw this in the Vegan Chocolate Fudgy Oatmeal Cookies and the Vegan Peanut Butter Oatmeal Cookies.) What’s with all the oatmeal, BTW?!
- Honey and peanut butter both act as binders while also giving the Oatmeal Bites amazing flavor!
I also love that this Oatmeal Bites recipe can provide an entire work-week’s worth (say that three times fast) of healthy on-the-go breakfasts! Bake up these lovelies on a Sunday, and grab a couple each morning on your way out the door. You’ll be satisfied for several hours, so less chance of grabbing a doughnut or hitting the vending machine in the morning!
And if you’re NOT quite in a hurry, try slathering a bit of peanut butter on top of one of these bad boys. Yes, I tried it, and it’s glorious! More peanut butter = more wonderful!
If you don’t always have time to eat breakfast (the most important meal of the day!) before you head out the door, you need these Healthy Honey Peanut Butter Banana Oatmeal Bites in your life! A delicious, good-for-you breakfast or anytime snack – what’s not to love?
- 1 medium mashed very ripe banana
- ¼ cup ground flaxseeds
- ½ cup honey
- ½ cup creamy peanut butter
- ½ teaspoon vanilla extract (optional)
- 3 cups old fashioned oats
Preheat oven to 350 degrees F. Lightly spray the cups of a muffin tin with non-stick cooking spray.
In a large bowl, whisk together the mashed banana and ground flaxseeds until combined. Let sit for 1 minute.
Add the honey, peanut butter, and vanilla extract and whisk until well-mixed.
Stir the oats into the mixture until thoroughly combined.
Evenly divide the oat mixture among the 12 muffin cups. (I used a #20 disher.)
Bake for 15 minutes, remove from oven, and allow oatmeal bites to cool in the pan.
Store in an airtight container for up to 5 days.
Can be made gluten-free by substituting gluten-free oats.
