Copycat Mint Chip Brownie Larabars – Everything you love about your favorite fruit and nut on-the-go snack made right in your own kitchen!
So, am I the only one who is mildly obsessed with Larabars? I mean, seriously, dates and peanuts are mixed together and end up tasting like a peanut butter cookie! Genius! While the classics are always delicious, my latest fixation is with the Mint Chip Brownie flavor. Have you tried??? For a healthy-ish snack, it is pretty amazing!
You may or may not be surprised to know that copycat Larabars are really easy to make at home. With a food processor and a handful of ingredients, you are on your way to a super satisfying, delicious, and (dare I say?) cheaper version of the packaged version from the store.
At its core, the Larabar is made up of dates and nuts. Depending upon the flavor, other fruits are combined with the dates, and mix-ins are sometimes thrown in. Generally, though, the basic recipe is comprised of dates and chopped nuts.
For these Copycat Mint Chip Brownie Larabars, dates, almonds, and cashews are supplemented with cacao powder, peppermint oil, and carob chips. You certainly can use cocoa powder if you don’t have cacao powder. Either will make the bars nice and chocolatey!
I tend to use carob chips instead of chocolate chips in my healthy-ish recipes because it makes me feel like I’m being kinder to my body. Maybe not, but can I live in my fantasy world for a bit, huh? If you choose not to fool yourself, mini chocolate chips are wonderful in this recipe, too. 😉
You may be thinking that 1/8 teaspoon of peppermint oil doesn’t seem like a lot. Trust me, you don’t need a lot! Peppermint oil can pack a punch, and there’s a risk for making the Copycat Mint Chip Brownie Larabars too overpowering. The first time I made this recipe, I used ¼ teaspoon, and the bars just about made my eyes water!
1/8 teaspoon fits the bill for me, but you may find you want a bit more. Definitely make the recipe to your tastes! In the end, you’re the one eating it!
I eat Larabars several times a week as a meal replacement or snack, and I love that I can make my own at home! It’s hard to beat a whole food snack that’s both tasty and satisfying.
I suspect these Copycat Mint Chip Brownie Larabars are going to be my go-to for a while. Easy, healthy-ish, and delicious. . .what’s not to love?
What are some of your favorite Larabar flavors?
- 1 cup packed pitted Medjool dates
- 1 cup warm water
- 2/3 cup raw almonds
- 1/3 cup raw cashews
- ¼ cup cacao powder (or cocoa powder)
- 1/8 teaspoon peppermint oil (or to taste)
- ½ cup carob chips (or mini chocolate chips)
Line a 5x9 loaf pan with plastic wrap so that it extends up each side. Spray the plastic wrap lightly with nonstick spray.
Place dates in a small bowl and pour warm water over the dates. Soak for 10 minutes. Drain.
Place the dates, almonds, cashews, cacao powder, and peppermint oil in the bowl of a food processor and pulse until the nuts are chopped and the mixture begins to stick together. Test by pinching some of the “dough” between your fingers.
Pour the mixture into the prepared pan. Fold the plastic wrap over the mixture and flatten the mixture firmly and evenly in the pan. Place the pan in the refrigerator for 1 hour.
Transfer the solid bar mixture from the pan to a cutting board. Discard the plastic wrap.
Cut the bar mixture into (6) 1 ½” wide bars. Wrap each bar individually in plastic wrap.
Store in the refrigerator for up to 3 weeks or freeze.
